If you have been on our blog before, you must have seen our version of the amazing Pioneer Woman’s Strawberry Oat Bars. Simple as can be and oh so delicious. I just love her recipes. Well, here is a similar crumb bar made with apricot jam. Of course you can use any kind of jam you like. These are so versatile, switch the jams around for a new take on an old favorite.
This recipe really is easy-peasy and a snap to throw together in no time at all. My family really enjoys these. I make them for almost every holiday since they are so simple and quick, and everyone loves them. Great for a pot luck dinner or dessert party and when I have friends over, these are easy to make and bake while we are chatting away. Try them soon. Do you like eating oatmeal for breakfast? We are big oatmeal fans in my house. On the blog we have a recipe for overnight oats. That’s made with regular quick oats. Have you had steel cut oats before? It’s totally different from the oatmeal we are all used to. Has more of a texture and is just as nutritious as the common oatmeal we are used to. Other names for steel cut oats are Scottish Oats and Irish Oats. Oats are known for lowering bad cholesterol, help stabilize blood sugar levels along with other great health benefits.
A bowl of steel cut oats are so versatile. You can add just about anything and have a different tasting oatmeal every morning. They are loaded with fiber and should hold you over until lunchtime. Another way to use the dry steel cut oats as well as regular oats are to add them to meatloaves. Instead of breadcrumbs, toss a handful and you will be adding fiber and nutrition to your loaf. Either a vegan or meatloaf.
This recipe is very simple and even if you make two servings, the cooked oats refrigerate well until the next day and heat up easily in the microwave. Try this soon and enjoy every spoonful.

If you have been on our blog before, you know we love hot beverages. Well, we love cold ones too but, today it’s all about another hot and creamy beverage. I love going to Starbucks for my favorite hot and cold beverages. Recently I had for the first time their Peppermint Mocha Coffee. Oh wow! it was fabulous. I loved it and knew it was a recipe I had to duplicate at home. The one thing I don’t like about any of the coffee shops is the high prices. Now, you can easily make this at home for a fraction of the cost.

One of my most favorite appetizers to order when eating out is bruschetta. So many restaurants serve it nowadays. It’s usually served on crusty bread like a baguette, Italian or French bread. Even on crackers.
A few times someone in my family have ordered a chicken or fish dish where the topping is fresh bruschetta. How delicious it is. I love anything made with fresh vegetables and of course garlic. This is the most simple throw together recipe. That’s why I called it a shortcut recipe. Using cherry or grape tomatoes really makes this even easier since you can find these in your local markets all year round. Also, I used a real shortcut. If you have been on our blog before, you know we have many pretzel snap recipes for a lot of occasions. I realized we didn’t have one for Christmas. So, my son and I ran to the store to pick up more pretzel snaps and his favorite Hershey Hugs, “Cookies and Cream.” Of course you can use any flavor you want. We got the sprinkles at Michaels. Or, you can find them this time of year in Target, Walmart and even some grocery stores.

Growing up my favorite candy bar was a Nestle Crunch Bar. There’s something about the crispy cereal mixed with creamy chocolate. Then, at a friends house, a friend gave me a peanut butter cup and I fell in love with them. I was not a big PB&J eater until I was introduced to a peanut butter cup. I loved both of these chocolate candy’s so much it was always a hard choice to pick when my mom would take me to the local and very small card/candy shop in my town. I grew up on Long Island, New York. We lived in a very small town with one card and candy store that was combined. On Saturdays after my mom got back from the beauty parlor, looking stunning I must add, she took me and my friend Laurie into the town to see a kids movie. Every Saturday was another movie just for kids. Since the candy was so much more expensive at the theater, she took us to the candy store to buy one and only one candy bar for the movie. Sometimes there was a double feature but in no way was she going to let us get two candy bars. It was a touch choice for a 10 year old to pick just one. That’s how my love of peanut butter and a crunch bar began.
Nowadays, I try to eat healthier for both myself and my family. Being a food blogger, my family has to be my most important food tasters and testers. Since dark chocolate is made without milk and is now said to be a healthy choice, it was apparent it was time to start making desserts with dark chocolate. If you have been on here before, you know we have lots and lots of great dark chocolate desserts some are candy bars such as truffles. This recipe today is one I have been making for more years than I can count. I just never put it on the blog! This is a recipe I have been making for over 20 years. When I lived in Atlanta many years ago, I was invited to a dinner party with a few new friends the first week I arrived there. The hostess was the aunt of one of my friends. Her name was Emily and she was so warm and friendly. She was born and raised in Georgia. Being a New Yorker, this was such a nice experience spending time with her family and new acquaintances for the evening. Her house was decorated beautifully; and her recipes were just wonderful, each and every one of them. I must have gained 5 pounds that night, from this pie alone! It was so delicious, I had to have a second piece. When we were getting ready to leave, I asked her if she would share her recipe for the apple pie. “More than happy to.” That’s what Emily said to me. Every time I had company after that evening this was my go to dessert of choice.
A few years later, I became a caterer, and I had to make 3 or 4 pies at a time. You can imagine how my apartment smelled. I even had one of my neighbors come over to tell me they were drooling in their apartment from the scent of apples and cinnamon. It was a special time, and I loved every minute baking away. So, here is the recipe for the most delicious apple pie that’s really easy to prepare. It’s great on its own or with a big scoop of vanilla ice cream.
